This recipe is for a single serving.
Shred 1/2 cup zucchini sprinkle with salt let sit in strainer.
Cook one strip bacon in large pan. (Save pan to cook hash n eggs in)
Squeeze out water in zucchini place in a bowl. Add one egg white, 1/3 cup lowfat cottage cheese ( or racotta), One green diced onion, crumbled up bacon salt and pepper. Mix up. Fry up in your large pan ( this will be creamy). Remove then fry up a sunny side egg and top. Enjoy!!
