THM Freezer meals - 2

The menu
(All pg numbers reference to Trim Healthy Mama book. If you have not read this book I highly recommend it. Let's just say life changing! )

The list:

We multiplied all recipes by 4 to get enough to stock our freezers. We did a variety of casserole sizes. This makes it nice for single servings at lunch time or family size for dinner. We did cut each Breakfast casserole into 12 and froze in individual servings.
Note: when mass cooking like this you alter some recipes.  Example we cooked all our ground beef the same and seasoned it to our liking.
5 dozen eggs
20 pounds ground beef
8 pounds Mozzarella
8 pounds sharp cheddar
2 cups Almond milk
1 cup ground flax
1 stick butter
2 pounds turkey sausage
1 bushel parsley
1 bunch green onions
2 cups mayo
2 cups heavy cream
4 onions
6 tomatoes
1 Jar dill pickles
4 Jars sugar free pizza sauce ( great value)
2 cans olives
1 pkg fresh mushrooms
2 bell peppers
2 zucchini
2 packages pepperoni (no sugar if possible)
12 cans wild caught Salmon
1 cup ground oats
Few dashes Nutritional yeast
4 cans Fat free refried beans
4 packages Laughing Cow cheese Light Swiss
40-50 plan approved tortillas.
* remember the veggies I have on this list our what I wanted in breakfast casserole and toppings for my cheeseburger and pizza casseroles.  You can use different veggies if desired.

  1. Did you cook each individual serving before freezing, or froze and then cooked when you needed it? Did these recipes work well for freezing like this or would you change anything now that you have tried it?

  6. Yes, I too would like to know what kind & where you buy the dishes that you froze the individual servings in, then how to reheat them at mealtimes! :)
