THM freezer meals- ONE

So my Step Mother and I decided to spend a day cooking freezer meals. Wow lots of fun and very nice to have on hand, however lots of work. So I'd like to share this post so if you'd like to give our Day  a try.... Here it is. Very yummy times. (I did change a few things based on what we'd do different next time :) ! )

Gather supply:
Day before would be best. Or split the list based on what each person may already have in there pantries! 

☆★☆This is per person. So if two people cooking x 2.... ect. We actually have 2-3 person families. So if you have a large family you may want to multiply x2 or 3 to feel your freezer! 


- 12 Large boneless skinless chicken breasts.
- 4 15oz cans of Green Enchilada Sauce (plan approved or homemade)
- 3(27oz) cans Whole Green Chillies
(you only need 2 based on recipes. However we wish we'd had more)
-8 oz 1/3 less fat cream cheese
-1 1/2 cups low fat sour creamy
-3 pounds lean ground beef
-Garlic (6 cloves or so )
-2-3  onions
- fresh basil
- 6 med zucchini
- 15 oz part skim ricotta
- 1/2 cup parmesan cheese
- 4 large eggs
- (24-30)  low carb tortillas
- 2 taco seasoning mix (homemade would be best)
-2 cans fat free refried beans
- 2 cans diced tomatoes with chillies                  -2 packages swiss laughing cow cheese (16 wedges)                                                                    -3 cans Salmon                                                        -28oz can crushed tomatoes

EXTRA INGREDIENTS

-Lawry's Season Salt
- parsley (fresh)
- Nutritional Yeast
- seasame seeds
- coconut oil (lots) for frying up your patties.
- salt, pepper and truvia (stevia) to taste

-Freezer Burritos: These are great. Each person can make one batch with beef and one with shredded chicken (same recipe but with chicken.... super yum!)

-Zucchini Lasagna: yummy! We made small freezer sized portions for we have small families. You can place in oven frozen however increase your over heat to 425F and increase time by 20-40 min.

-Sponge Bob's crabby patties: oh boy these are yummy and can be placed frozen in the oven or microwave (1 min). We followed the Pearl chats section (highlighted in grey below recipe) with the added ingredients. ... oh wow!

Ok so 1st step!!! Cook all meat. The easiest way to do this is to boil chicken in seasoned water. Yes all chicken!  Also cook all ground beef with diced onion, garlic and seasoned to taste. Next cut/shred everything (onion, cheese, garlic, zucchini).  Cut zucchini in thin slices sprinkle with sea salt and place in colander to drain. Clean cans of whole green chillies. Split with thumb on one side and clean out seeds. Then place in colander to dry. Shred chicken. Then place zucchini on paper towels and pat dry. Grill zucchini till cooked. Set aside. 

Now that everything is prepped start with whatever recipe you'd like...  have fun!
